Trigger a workflow if a category field has not been updated in a certain number of days

Hi Podio community, I have been searching unsuccessfully for a way to trigger a workflow based on the length of time a specific category field has sat idle. It would be extremely useful to me if I could create a workflow that went: If any project has been sitting in the "in progress" stage for over 10 days then create a task to follow up on said project. I know there are ways to trigger a workflow when a date field is reached but that is not what I need. I also understand that there is a trigger to based off when the entire item was last updated but that is not helpful as I might update some other part of the project without changing my "Status" category. If this is possible please let me know, thanks.
