Does the podio java api suppport Category and references fields?

  I don't think so, no. It hasn't been updated for a while, as it's not widely used.

  Finally, we could use category and references item fields values using Podio System. In order to use it, you should use a list of Map as value. This List must contain a singleton map with key="value" and value="id". The id must be a java.lang,Integer object in order to work. Each singleton map represent an option in case of category or a reference in case of references.
